My farmers will not plant.
That is the seed queue, not Sanity. Set the seed and the amount. Then check that a farmer is actually assigned.
Sanity
Send them to the apartment before the meter hits the floor. What a Peoplesprout is lives on its own page.
Updated
Farmers, retailers, manufacturers. Bone Nail's line is that they cover almost every repeated click, and you only pick who does which job.
Talent matters. A farmer on the counter does not fix Seeds depleted, and a retailer does not run the machine. Read the talent before you confirm the assignment.
Overwork empties Sanity. Recovery is the Peoplesprout apartment, not a night of leaving them on the plot. Put them in the apartment when the meter drops. Leaving them assigned through the warning is how you lose the worker for longer.
If you have more sprouts than jobs, release the extra. The game includes release so you are not forced to house every body you grew.
The Peoplesprout pitch is literal. A finger, an eyeball, or a brain goes in the ground and comes up as a worker. The system opens in the mid-game. The demo only previewed it.
Growing another one spends alchemical sediment. If Assign is hungry for sediment, use the sediment guide. Do not expect a clean, successful potion to drop it.
Sissi is the first full-time hire and a farmer, even though she wanted to be a housemaid. Put her on the field.
Nene is described as the Peoplesprout keeper, not as another pair of hands. She is the management side once the apartment and the roster exist.
Reviews say auto-assign pulls a working sprout off to rest and sends a resting one back out, and that the quick-select toggle resets to off every time you open the roster. There is no sort besides star rating.
If auto-assign is shuffling your line, turn it off and set the three jobs by hand. It is slower. It stops the swap.
No posted cap on how many sprouts you can keep, no wage, and no number for how long the apartment takes. Use the Sanity meter in front of you.
Abilities from alchemy are a separate experiment. Bone Nail says you can transmute junk into a skill for a sprout, and that a wild element mix misbehaves. Do that on a spare sprout, not on Sissi.

Yes. Release is in the management tools so unwanted sprouts do not have to stay housed.
